One-Pot Smokie Mac Camping Recipe

One-pot meals are a great way to keep dishes minimal and enjoy a home cooked meal around the picnic table or camp fire. This recipe requires very few ingredients and is best cooked with a steamer 3qt pot. If you do not have a steamer pot in your camping arsenal use a pot (with lid) you have and toss in a steamer basket to cook the broccoli. 

For me, this meal brings back nostalgia from a childhood recipe my parents would make during a busy week. I ditched the pasta and homemade sauce for boxed mac & cheese to make it a camping friendly meal. One-Pot Smokie Mac

This is an easy one-pot camping meal to have dinner on the picnic table within an hour, while still getting in some protein, veggies, and carbs after a fun day outside. The one-pot makes for easy dishes before the sun goes down and it is time for s'mores.

Ingredients
  

  • 1 large broccoli crown or 2 small broccoli crowns
  • 14 oz Lit'l Smokies®
  • 5.5 oz Banza Mac & Cheese made with chickpea pasta or mac & cheese of choice
  • ingredients required of your mac & cheese (milk, butter etc.)

Equipment

  • 3-4 qt Steamer Pot with Lid can use a pot with lid and steamer basket instead
  • Cooking Spoon
  • Cutting Board and Knife

Method
 

  1. Cut broccoli crown(s) into individual florets
  2. Steam broccoli florets for 20 minutes
  3. Drain water, set broccoli aside
  4. In the same pot cook mac & cheese according to the instructions
  5. Add Lit'l Smokies® and broccoli to the cooked mac & cheese
  6. Serve and garnish with salt and pepper

Notes

Please read the instructions for your preferred mac & cheese. Most require milk and/or a pat of butter!
